January 3rd – Chocolate Covered Cherry Day!

Yay for Yummy Days!!!

I have to start out by saying happy birthday to my Momma! This National Day it couldn’t have fallen on a better date because chocolate covered cherries are my Momma’s absolute favorite! Her daddy got her hooked on them because they were his favorite, too. I get her a box every year for Christmas and it always makes her so happy…

Luckily, us Vegans don’t have to go without because I’ve put together a super simple recipe so we can enjoy them, also! It’s SUPER simple!

What you’ll need:

Parchment paper


Coconut oil

Dairy-free chocolate chips

Cherries… I had to get the jarred maraschino cherries because the fresh ones were not so fresh…




Strain and rinse off the cherries and allowed to air dry or pat dry with a paper towel.

In a saucepan, heat chocolate chips and one tablespoon of coconut oil to honey-thick consistency.

Stick a toothpick in a cherry and dip into melted chips. Lift and let set for a minute then dip again. Repeat until coated to your liking.

Place cherry on parchment paper and let set in fridge. We left them in the fridge for about 30 minutes.
